I have spent a fab Christmas with family and friends. My mum cooked Christmas dinner and we were then entertained over several days (including tonight) so I haven’t done any cooking at all! Got two brilliant cookbooks – Mary Berry’s Baking Bible and The Primrose Bakery Book – plus some new baking tools and a cake stand so I am all set for 2012! I made Coconut and Raspberry Slice from the Primrose book this afternoon. It took a bit longer than I expected because there is a separate mix for the base and topping as well as a jam layer but it was worth the effort. The recipe suggested adding fresh raspberries as well as the jam but the supermarket was cleaned out by the time I got there yesterday so I did without… will add them next time… important to get one of my 5 a day in!
I made these vanilla cupcakes for my dad’s birthday – the iced lettering reads “Happy BDay Dad”. I made a dozen cupcakes so I was a bit restricted! He got the gist anyway and the candles made it obvious they were specially for his birthday! An amazing amount of peanut butter went into these cookies! I followed Lorraine Pascale’s recipe. They turned out well although they looked nothing like the cookies in the photograph. I might get an oven thermometer to check my oven temperature because it really confuses me when things don’t turn out right! I am blaming my tools!

We recently went to Chatsworth Farm Shop which is always a treat! Tried not to go too mad but did slip some Boxing Day chutney, carrot cake, homemade chicken pie, fresh bread and some organic red wine (supposedly lower in sulphites which I am allergic to) into the basket! They had piles of Christmas cakes and some great gift ideas. I took a few snaps to show you… nice hey!
I have just made Friands which the cook book says are popular Australian coffee shop cakes… I am not sure whether the ones I made would be very popular! They got stuck in the tin and I had to pry them out. The one in the photo is the best of a bad batch! They are made with egg whites, icing sugar, a tiny bit of flour, melted butter and ground almonds so should be light and airy. Mine turned out moist and didn’t hold together well at all but they taste nice!
