I have just made Friands which the cook book says are popular Australian coffee shop cakes… I am not sure whether the ones I made would be very popular! They got stuck in the tin and I had to pry them out. The one in the photo is the best of a bad batch! They are made with egg whites, icing sugar, a tiny bit of flour, melted butter and ground almonds so should be light and airy. Mine turned out moist and didn’t hold together well at all but they taste nice!
