I made these cupcakes this morning to take to my friend’s house. It was the first time I had made this frosting which is made by boiling sugar and golden syrup together and pouring this over a whisked egg white whilst beating the mixture like mad until it is thick and glossy. The frosting is light, sweet and marshmallowy and was much easier to make than I imagined… although there is a pan covered in caramel sitting by my kitchen sink which I still have to tackle!
