Happy Mother’s Day! Today I followed the Primrose Bakery recipe for raspberry cupcakes with a raspberry jam centre and topped them with vanilla buttercream and fresh raspberries. Mmmmmm mmmm! I am also loving my new glass cake stand which was a present from my mum and dad. Not seeing my lovely mum today unfortunately but next time I visit I will make sure I bring some nice cakes!

The recipe suggested combining all of the ingredients in a food processor which was a method i hadn’t tried before but it worked well and there seemed to be less washing up too! Next time I make these I will top them with white chocolate buttercream I think.
