It was my husband’s birthday on Wednesday and I made him some banana cupcakes with caramel icing following a Primrose Bakery recipe. I had to have two goes at the caramel icing which was made by making caramel and stirring in icing sugar. The first time around I left the caramel to cool for too long before adding the icing sugar and I ended up with a pan of useless crumbly fudge! I got there in the end anyway and they got a good review from the birthday boy so it was worth the effort!
