Our good friends David and Emma had a gorgeous baby girl a few days ago named Isla. They are chocoholics so I thought Lorraine Pascale’s “I just don’t give a damn” chocolate cake would make a perfect treat to give to them – although they will need a bit more than sugar to keep them going!

Cake ingredients

vegetable oil for oiling

140g creme fraiche

130g very soft butter

230g soft light brown sugar

2 drops of vanilla extract

4 eggs

180g plain flour

pinch of salt

40g cocoa powder

10g baking powder

Chocolate frosting ingredients

80g good dark chocolate

130g softened butter

2 drops vanilla extract

250g icing sugar

Equipment

two x 20cm (8 inch) loose bottomed sandwich tins

Preheat over to 180 c gas mark 4.

Oil the tins and line the bottom with grease proof paper.

Put all the cake ingredients into a bowl and beat well for 2 to 3 minutes until everything is combined. Split the mixture into the cake tins and level the tops. Bake for about 25 – 30 minutes or until the cake is well risen and coming away from the sides. Remove from the oven and cool in the tins for about 5 minutes, remove from the tins and cool on racks.

To make the frosting, melt the chocolate. Put the butter, vanilla and icing sugar into a bowl and whisk until light and fluffy – be prepared for a cloud of icing sugar when you start. Add the slightly cooled chocolate and beat until combined.

When the cakes are cool, sandwich them together with some of the frosting and then slather the rest of the frosting onto the top.
