These Valentine's inspired coconut and raspberry sponge cakes are covered in a cloud of sugary American frosting. The fresh raspberries make sure the little hearts are not too sickly sweet – it's not the 14th February yet! Surely it's much nicer to bake something for Valentine's than to buy bright pink plastic looking cakes from the supermarket!?! Then again maybe I'm a cake snob!
