I came across an article by The River Cottage which said “What’s the secret to making great chocolate brownies? Firstly, the eggs and sugar need to be whisked vigorously so the mixture increases vastly in volume. Secondly, you must use good-quality chocolate with 60–70 per cent cocoa solids. The recipe is a good one and I would definitely recommend giving it a try. I replaced the second lot of chocolate chips with chopped pecan nuts. The brownies were intensly chocoloatety and moist but not too fudgy and they kept really well for a few days. Hmmm… if only I had one left to have with a cuppa!
